Port, Madeira & Sherry

Wiese & Krohn are one of the last independent port produces in Porto and are considered a cut above the rest. Black plums, spice and dried herbs with a rich, long satisfying finish.
This Tawny port is from a specific year and this is the equivalent to a 10 Year old Tawny port. It has a spiced and raisined nose with hints of buttery toffee. Ripe black cherries with lavender and a broad nutty finish. Delicious.
Forget cooking Madeira, this is the real deal from the award winning Barbeito winery. Nutty nose with some subtle spice notes. The palate is rich and concentrated with a lovely acidity.
These words from the wine critic Matthew Jukes should sell this wine to you –“This weird, dark, mysterious, mahogany-hued wine is hypnotic, ever-so-slightly-hallucinatory and unbelievably intoxicating. This is a dreamy, smooth, coffee, raisin, walnut and Christmas spice wine” (Sweet).
Cognac

These grapes are sourced from the prestigious Grande Champagne area of Cognac which means that this VSOP tastes much better than most branded XOs.
Leopold Gourmel cognacs are considered in Paris and most of the Michelin star restaurants as the reference in quality cognac. Leopold believes that at different ages of maturity cognacs take on unique taste profiles, so at 10 years old this ‘Age of Fruits’ has a pleasant roundness of mature fruits with hints of citrus. A smooth fulfilling cognac.
At 15 years old this ‘Age of Fleurs’ is warm, delicate, velvety mouthfeel with floral, vanilla and rich white flower notes.
At 20 years old this ‘Age of Spices’ is powerful, round with a touch of pepper, enticingly rich in both depth and length.
Armagnac

This traditional Armagnac is distilled exclusively from the Folle Blanche grape variety and is aged for 8 to 10 years in oak barrels. Dried fruits with a touch of ginger, violet and vanilla.
The traditional pot stills used by Clos Martin allows more aromas and flavour to be imparted into the Armagnac. This one is aged from 15 to 20 years in barrel producing a spirit with hints of vanilla, cinnamon, dried orange peel and a touch of tobacco leaf.
Spanish Brandy

Being a sherry house as well as a distillery means that this wonderful Solera Reserva brandy is aged in its own Oloroso and Amontillado sherry barrels. The palate has a surprisingly soft texture that is balanced and harmonious on the long finish.
Fernando De Castilla
Have you ever tasted a brandy that was served at a Spanish Royal Wedding, and to the World Leaders at the G8? Then this is your opportunity. Golden mahogany colour with complex, elegant aromas with a hint of oak. Wonderful depth and maturity on the palate.
Rums

From the island of Barbados comes this lovely rum which is distilled from molasses and then matured for 5 years in old whisky and American bourbon barrels. A tasty rum, to be enjoyed on its own or on the rocks and considered the height of good taste in the Caribbean.
Not really a spirit to be drunk on its own but when mixed with Cola or Ginger beer it takes on a life of its own that is unique to any other rum. Most Australians are drip fed this rum which is known affectionately in Oz as ‘Bundie’, so why not give it a try.
A fabulous Venezuelan dark golden rum, distilled from molasses in copper pots before 12 years of ageing. A rich, sweet and fruity palate that lasts in the mouth for a lifetime. Almost like Banoffee pie in a glass. Fantastic quality, do not miss the chance.
Scotch Whisky
Islay25ml50ml
Bunnahabhain 12yo is a very lightly-peated malt that serves as perhaps the mildest introduction to the Islay style. Floral and fruity tones dominate with the peat influence in the background. It was awarded the top prize in its category at the World Whisky Awards.
This fine distillery is near Port Askaig and produces the most palest colour of all Islay whiskies. On the nose it is cured sweet ham and honey with notes of ash and delicate malt. On the palate, the trademark notes of cigar ash with a balancing sweetness finishing on its long length with the influence of delicate, salty sea air.
When a whisky leaves the barrel after ageing it comes out at over 60% proof, most are then watered down – this one isn’t to retain all of its flavours! Hint of burnt wood with salty sea air. Orange peel, vanilla, dark chocolate with sweet vanilla notes like ice-cream, spicy with dark chocolate bitterness. Some people water a cask strength whisky down.
Speyside25ml50ml
This old Speyside distillery had been in disuse for many years but independent bottlers, Gordon & Macphail, bought it and have been waiting over 10 years for this drink. Aromas of woody bonfires, smoked cheese and dried apricots. On the palate apricots, raisins, toffee, coffee with underlying soft smoky, smooth character.
It has sweet coconut fragrance which opens out onto biscuit aromas. The mouth feel is smooth, silky and enticing with notes of marzipan, macaroon, chocolate & biscuit.
Highland and Islands25ml50ml
Tobermory is an unpeated whisky which has a fresh, lightly smoky nose with a medium dry, smooth fruity palate with a rich and well rounded finish.
This whisky has aromas of apples, pears and pineapple, hints of honey & vanilla. On the palate it has honey and floral notes with hints of coconut & rich spices on the long smooth finish.
Lowland25ml50ml
Lowland whiskies are considered to be light and smooth. Fresh mint, subtle malty aromas with exotic fruit, especially kiwi. Creamy, sweet with soft fruit and a hint of mustard powder.
Irish Whiskey

Distilled in the old Irish tradition this pure pot still single malt whiskey uses only the most natural Irish ingredients of barley and fresh spring water. It is then left to mature in oak casks stored in 200 year old granite warehouses allowing it to develop its full flavour and character.
Inspired by Ireland’s ancient distilling traditions of drying malting barley over peat fires, Connemara is Ireland’s only peated single malt. Smoky peat, heather florals with hints of honey and oak on the nose. In the mouth it is smooth with honey, malt, fruit and full bodied peat.
Single grain whiskies are very rare as they are normally blended with malts. This one is distilled out of maize and corn then matured for 8 Years in first fill ex bourbon casks. Soft, sweet corn with hints of bourbon followed by a rich, soft, grain finish.
Other Whisky

Englands only distillery was founded in 2006. Wet harvest aromas with fresh, warming, cereal notes. On the palate it is a balance between sweet & sour, barley and wood.
JapanFounded in the 20's by a Japanese man trained in Scotland, 'Yoichi' 10 Year old has a pronounced, astonishingly fresh, dry, peaty nose with mint creams, then oranges followed by the peatiness on the palate. Lovely.
Spirits

For a more delicate digestif, then you do not get much better than a Lemoncello from Italy. Fresh and zingy on the palate, hints of lemon sherbet and the creaminess of a lemon curd pie.
This clear spirit is made in Italy by distilling the grape skins which are left over after the annual wine vintage and this one is exclusively made from Gewurztraminer grapes.
This is a sweet, golden colored 80 proof liqueur made from malt whisky, honey, herbs and spices.
Berneroy’s distillery is in the heart of the Pays D’Auge, Northern France and is now respected as the leader in producing quality calvados. A rich, apple, vanilla nose with a complex palate layered with flavours of apples, spice and toffee with hints of caramel.
